Principles of Economics, by N. Gregory Mankiw

This book is an average student friendly. It will help you to understand various concepts much easily.

'The Undercover Economist' by Tim Harford- Once you have read this book, you really understand why Organic and Inorganic vegetables are never kept side by side in a super market.

Another Interesting book is 'Naked Economist' by 'Charles Wheelan'. You will understand how economic policies influence our lives, how prices can be kept high or low through policies, the impact of subsidies and what not. Complex concepts are taught using examples people can relate to and understand.
