Ethiopia and Liberia.

Yves Granger notes that Ethiopia was controlled for a time by Italy. I guess the reason most sources don't count that as colonizing was that Italy grabbed Ethiopia late and held it only briefly. Italy did eventually control Ethiopia, but only from the mid-1930s.

If you go back to the late 1800s, when the rest of Africa was being sliced up for European benefit, Ethiopia was genuinely independent -- even managing to inflict one of the great victories over Italy at the Battle of Adwa.

H. Kingsberg provides a lot of good detail about Liberia in his answer. He rightly describes Liberia as an American protectorate. A protectorate isn't a free and independent nation, but neither is it a colony. Liberia had more autonomy than a colony and was not exploited by the US government the way African colonies were. It was exploited by Firestone, but not by the USA.

(I lived there in the 80s, and more than one Liberian explained the country's poor condition was because they'd never received the benefits of colonization. They could see the improvements wrought in Cote d'Ivoire by the French.)

So the best answer to the question is still "Ethiopia and Liberia and (thanks to Anonymous) Zanzibar".
